Pumpkin-banana-coconut with brown butter glaze.



1 cup applesauce
1 1/2 cups brown sugar
1 ripe banana, mashed
1 1/2 cups canned pumpkin
 3/4 cup milk
3 1/2 cups whole wheat flour (if you can, freshly ground is best)
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon salt
1/2 teaspoon allspice
1/4 teaspoon baking soda
1/2 cup sweetened shredded coconut

Bake at 350 til they're done. Spoon glaze over tops while still warm.

Brown Butter Glaze:
1/4 cup unsalted butter, melted in a pan over medium heat until it just starts to turn brown
whisk in powdered sugar (til it tastes right)
milk or halfnhalf (not too much, til it is a little runny)

Crab Linguine

Linguine with Crab sauce

12 oz. linguine (spaghetti)
1/2 cup butter
1 clove garlic
1 cup whipping cream
1/2 cup grated parmesan
1 small package crab (crumbled)
1/2 tsp. salt
1/4 tsp. pepper
About three green onions diced

Cook liguine according to package. Drain. Transfer to serving platter. Melt butter, minced garlic cook til soft. Add cream, salt & pepper let simer til starts to thicken takes 5 min.
Stir in parmesan cheese. Add crab to pasta noodles. Pour sauce on top of crab. Top with green onion and serve.

Stuff entered in fair this year

Here is some of the stuff I entered in the fair this year. First time making the Chevron baby blanket. I got  red ribbon on it and really wish they wrote something to work on here. My ends were tucked in. No knots and was successful in pulling it all together with the edge to look like a perfect square. I'm not giving up on this style I thought it turned out beautiful and is perfect for that baby boy!

I Love that green hat and made that this last winter, it was my favorite but was saving it for the fair. Now I ccan wear it. The black cat is a remote holder. (A.K.A. T.V. Jake pattern found on line) Baby booties that look like al.l star shoes, Hello Kitty for my neighbors daughter. Raspberry Jalapeno Jam first time making that yum! Dishcloth with very loopy thread. Small round scrubbie and a crocheted edge for minnie mouse blanket.

Chocolate Turtle Pecan Cookies

Chocolate Turtle Pecan Cookies

3/4 C sugar
1/4 C shortening
1/4 C butter or margarine
1 tsp vanilla
1 egg
1 3/4 C Flour
3/4 tsp cream of tartar
3/4 tsp baking soda
1/4 tsp salt
3/4 C chopped pecans
36 caramels, unwrapped
2 Tbs milk
1 C  Chocolate Chips (6 oz.), melted

-Heat oven to 350 degrees. In large bowl, beat sugar, butter, shortening, vanilla and egg. Stir in flour, cream of tartar, baking soda and salt.

-Shape dough into 1" balls. On ungreased cookie sheets place balls 3" apart. With greased bottom of glass dipped in sugar, flatten balls slightly. Press 1 tsp pecans into each cookie.

-Bake 9 to 10 minutes or until set but not brown. Cool slightly; remove from cookie sheet to cooling rack.

-In small microwavable bowl, microwave caramels and milk on High for 2 to3 minutes, stirring every minute until smooth. Spoon caramel over cookies; top with melted chocolate. Cool completely, about 30 minutes.

TO MELT CHOCOLATE: Use small saucepan over low heat, stirring frequently until melted. Or microwave chocolate chips in a small microwavable bowl on High 1 to 2 minutes, stir until smooth

ButterScotch Rolls

ButterScotch Rolls 18 dinner rolls frozen 1 small pkg. butterscotch pudding 1/2 cup brown sugar 1/4 cup butter Generously grease bundt pan. Sprinkle nuts on bottom and lay rolls on top. Sprinkle with dry pudding mix. Bring butter and brown sugar to boil and pour over rolls. Cover with plastic wrap. Let set overnight. In morning preheat oven to 350 degrees. Remove plastic and Bake 20 minutes. Invert onto serving plate. Enjoy!

Parmesan Gnocchi in Cream Basil Sauce

Parmesan Gnocchi in Cream Basil Sauce This recipe has been passed on by an Italian family. It is not made with potatoes instead ricotta cheese is used. I otherwise call these an italian dumpling. .
Gnocchi dough 2 cups ricotta 2 eggs 1 cup shredded parmesan 1/2 tsp. salt 1/2 tsp. white pepper 1/2 tsp. nutmeg 2 cups flour (may need more for rolling out dough) Mix all ingredients together. then gradually add flour. You want a soft not to sticky dough. Chill dough overnight. Work with 1/3 of dough at a time. Roll out on floured board into a long narrow tube. Cut into 1/3 of a inch thick and roll into a fork to form ridges. Ridges help hold the sauce, so don't worry about perfection. place on a cookie sheet (may chill til cooking time)cover so they don't dry out. In a large pot boil water 3/4 full and drop gnocchi into boiling water when they float they are done and ready to eat. Take gnocchi out and place on platter. Make your sauce during the cooking time. Sauce 1/2 cup butter 2 oz. of prsciutto chopped 10 torn basil leaves 1/4 cup pine nuts 1 cup cream (beat 1/2 of cream) 1/2 cup shredded parmesan Place butter and cream into a saucepan. Brown pine nuts in a saute pan. Add all ingredients except parmesan cheese to saucepan and turn heat on low and stir til butter melts. Add parmesan cheese after stirred in well. Pour over Gnocchi and enjoy. You will be happy you gave this a try.

Cheddar Olive Bread



Cheddar Olive Bread

1 1/4 tsp. active dry yeast
1 1/8 lukewarm water
1 1/2 tsp. sugar
3/4 tsp. salt
3 cups flour
1 1/4 cup shredded cheddar cheese
3/4 cup small pimento stuffed olives (I cut into three slices)
Add all ingredeients to bread maker except olives. Wait for the beep to add them. Let bread machine finish and bake bread.

This is a very soft texture bread. Turn out great!

Super Energy Drink

I love to watch Dr. Oz! Now I'm not a health nut and I don't take vitamins. But I do about having good health and taking care of my health. On Dr. Oz this is a healthy start for your day Energy boost drink that I had to try. Even with a cold I notice a difference of feeling refreshed and feeling pretty good after drinking this.
Super Energy Drink
1 small coconut water
A handful fresh spinach
1 banana
1/2 cup blueberries
1/3 of fresh pineapple cut up
1 green apple or some watermelon diced up
Blend it up in your blender and drink

Everyone in our house loves it!

The Best Pretzels!


Best Pretzels

4 tsp. Yeast
1 tsp. Sugar
1 1/4 cups warm water
5 cups flour (sifted)
1/2 cups white sugar
1 1/2 tsp. Salt
1 tbs. Vegetable Oil (may need 3 tbs. Water)
1/2 cup baking soda
4 cups hot water
1/4 cup kosher salt or pretzel salt

In bread maker combine yeast 1 tsp. Sugar and water let stand while sifting flour and add to mixture. Next add vegetable oil. Set bread machine to dough setting. Watch for consistency (may need 3 tbs. Water)
Set oven to 450 to preheat. When dough is ready make baking soda and water mixture. Roll dough out onto slightly floured counter top. Use pizza cutter and cut into long strips. Slightly pull them out so they are long and twist ends together and tuck down to middle to for pretzel shape. Dip into cornstarch mixture and place onto prepared baking sheet sprinkle with the salt and bake 8 minutes. Dip in melted butter and enjoy! Makes over a dozen.

Chicken Salad



This makes alot!

Chicken Salad

10 chicken breast (boiled or pressure cooked)
2-3 bunches fresh spinach
1 head of lettuce
3/4 cup grated swiss cheese
1 cup cottage cheese (drained)
1 pkg. wontons cut into strips and deep fry and drain

Fry the wontons in oil. One side and then the other, drain. (they fry quickly)
Boil chicken 1-2 hrs. Tear chicken apart to make stringly. Let cool. Mix lettuce, spinach and chicken together. Add cheese and cottage cheese. An hour before serving add wontons.

Dressing

1 tbs. poppy seeds
3/4 cup white vinegar
3/4 cup olive oil
3/4 cup sugar
1 1/2 tbs. grated onion (I use green onion)
1 1/2 tsp. salt
3/4 tsp. dry mustard

Mix dressing put over salad last (Makes a lot- Make 1/2 to get use to the size)

AVOCADO BEAN DIP



Avocado Bean Dip

1 can black eyed peas (drained)
1can white corn (drained)
1/2 red onion chopped
2 Avocados peeled and chopped into bite size pieces
Italian dressing just enough to wet it down
Salt n Pepper to taste

Mix all ingredients together and serve with tortillas

Movie Theatre Floor


HAHA!!! Movie Theatre Floor is what this is called, I so had to make it!

3 bags of popped popcorn
1 bag of fritos
1 pkg. candycorns
1 can mixed nuts
1 bag of m&ms
1 bag white chocolate chips

Mix all ingredients but last in very large bowl
In microwave melt white chocolate chips just enough to stir into a paste and pour over everything in bowl. Mix with a rubber scraper. Let chocolate set up and serve.
Makes a huge bowl full or a floor mess!
